Favourite things to pass the time

Now is time to bunker down and enjoy the simple things in life and regroup. Posting the “Must Have Items” for Spring just feels wrong. I am glad companies in the world are focusing on the safety and concerns of others instead of how they can increase their online sales.


For example, LVMH, owner of Louis Vuitton is using their perfume production line to make hand sanitizer to protect people against the Coronavirus. This will be available for French citizens and won’t make it to Canada, but this could help the spread of the disease, indirectly helping all parts of the world. Spirit of York, a local distillery is now making hand sanitizer for locals here in Toronto. If you are in need, reach out! I send praise to all of these businesses!

Favourite Chocolate Chip Cookie Recipe:

CHOCOLATE CHIP COOKIES


Makes 24 large cookies

Prep: 20 mins

Cook: 20 minutes

INGREDIENTS


225g/oz unsalted butter, at room temperature

1 tablespoon vanilla extract

210g / 7 2/5 oz light brown sugar

200g / 7oz caster sugar

2 eggs

420g / 15 oz plain flour

1 1/2 teaspoons slat

3/4 teaspoon baking soda

150g / 5oz dark chocolate chips ( preferably 65 per cent)

Maldon sea slat, to taste





METHOD

Preheat the oven to 180*C / 350*F / gas mark 4. Place the butter, vanilla extract and sugars in a bowl and, using an electric mixer, cream the ingredients together until smooth, light and fluffy. Add the eggs one at a time until mixed in.


In a separate bowl, combine the flour, salt and baking soda and gradually add to the mixture. Mix until just combined. Add the chocolate chips and mix roughly. Do not overmix.


Separate the dough into 24 pieces and lay them out on greased or parchment lined baking trays, making sure you leave enough room between them to spread. Sprinkle each with a pinch of Maldon sea salt. Bake in the oven for 15 minutes or until the cookies are golden brown.


HOUSE TIP

Refrigerate or freeze any spare dough for another batch, or use raw mixed with ice cream.
